Turkey Stuffed Zucchini

Leading up to going on vacation, I try my hardest to eat everything in my fridge so that I don't waste anything and have it spoil when I am away.  The other day, I realized I had a ton of organic zucchini lying around and organic ground turkey, so I decided to whip up a dish using both.  I have seen many different versions of Turkey Stuffed Zucchini on the web, but some required more ingredients than I had lying around.  So, I improvised and made my own version with what I did have and added extra veggies.  It turned out to be a family hit, and Ryan thoroughly enjoyed digging in.  It was hearty, and loaded in veggie!

Turkey Stuffed Zucchini

Cook Time: 40 min.

Ingredients (serves 3-5)
  • - 5 zucchinis (if they are small), we use organic
  • - 1 lb pound ground turkey (we buy organic from Costco)
  • - Heaping handful of spinach (I used organic)
  • - 1 cup chopped onion
  • - 1 1/2 tablespoons minced garlic
  • - 1/2 tablespoon oregano
  • - 1/2 tablespoon basil
  • - 1/4 tablespoon rosemary
  • - Handful of shredded Parmesan cheese (I love Sargento)
  • - Non-stick cooking spray if not using stoneware to bake (I use olive oil PAM for added flavor)
  • - 1/3 cup of spaghetti sauce
Instructions
- Preheat oven to 350 degrees.
- Spray skillet with non-stick cooking spray, add onions and saute until nearly soft (approx. 10 minutes on medium heat).
- Add ground turkey, garlic, basil, rosemary, and oregano, cook until meat is no longer pink.
- Slice zucchinis in half lengthwise and scoop out centers.
- Take centers and throw into the turkey mixture on the stove with a heaping handful of spinach. Cook together for 2-3 minutes.
- Place zucchinis in large baking dish and spoon in turkey mixture.
- Cover with tin foil and bake for 10 minutes, remove foil and bake for another 20 minutes.
- Sprinkle cheese over zucchinis and bake for an additional few minutes until cheese has melted.
- Top with spaghetti sauce for additional flavor (optional).
